chore: update to evmlib 0.1.8

This version has a change for increasing the timeouts on some types of transactions, which should be
helpful because I had some timeouts when trying to upscale the prod uploaders.

I also made a couple of basic changes to the funding process:
* It prints out more text that was previously only available with debug-level logging. This output
  is actually useful because it can take a while to transfer funds to the wallets.
* Changed some of the variable names, which I think helped make the code a bit more readable.
