docs: fix backslash in install boost and LGPIO doc section

Backslash documentation bug was introduced after formatting using code syntax in README. This section, https://github.com/jamespilgrim/PiTrac/blob/main/Documentation/Raspberry%20Pi%20Setup%20and%20Configuration.md#install-boost and following section of LGPIO.
