In Zeebe Modeler 0.8.0, default flows can currently only be selected via the wrench symbol on a flow connection, which is easy to miss. In Camunda modeler, I believe it was at least in a context menu.
Describe the solution you'd like
A much more userfriendly solution imho would be to add a checkbox property for the default flow to the properties panel (there is enough space still...) when a flow is activated.
Describe alternatives you've considered
"default flow" option in context menu (would be good additionally, but is missing in Zeebe Modeler)

of course - however I just checked in Camunda modeler 3.5.0 and it's the same, no checkbox in properties and no context menu item, just available using the wrench icon:
