Describe the problem that you are trying to solve.
When trying to develop chaincode that relies on 2 organisations, such as when using private data, this is not possible with this extension.

Describe the solution you'd like
A way to either add a standard 2-organisation or a way to edit the network prepared by the extension.

Thanks @vrwim for creating the enhancement request. Will add this in the backlog and plan for it.
For this specific scenario, would you also need a way to define private data collections to the network?

For me personally, I wouldn't really need to define a PDC as I always use the implicit one that's always present. I never personally needed one that spanned across multiple orgs, but it would be nice to be able to define them.
