In Ubuntu, I've put a custom icon in /usr/share/icons/ named opensnitch-ui, and I see the same in the app grid (Show Applications) or whatever it's called.
However, the same icon isn't used in the (vertical) Ubuntu dock that has favourites and currently open applications.
I see in /usr/share/applications/opensnitch.desktop that there's Icon=opensnitch-ui... so it should work.
Any other customisation I'd need to do?
